Antonius Caviar

Nature and caring for the health of sturgeon are our priorities

Crystal clear water, a non-industrial region, excellent thermal conditions. We make sure that our sturgeons have perfect conditions.

Sturgeon species

The Farm uses roe of Russian sturgeon (Acipenser gueldenstaedtii) and Siberian sturgeon (Acipenser baerii) to produce caviar. The process of selecting sturgeon females is extremely rigorous and requires precise knowledge. Females reach reproductive age after 7 years. Roe for caviar production is extracted only from mature females aged 8-10 years. We make sure that our sturgeons are in perfect health as this, together with the uniqueness of the place they are bred in, influences the quality of caviar.

A special place

Warmia – the north-eastern part of Poland. This is where our great sturgeons mature. We breed our mature sturgeons in a non-urbanised region called the „green lungs of Poland” which was included in the Natura 2000 network. It directly borders on a nature reserve „Las Warmiński” and the Napiwodzko-Ramucka Forest. The breeding ponds are supplied with crystal clear waters of the Łyna River. There are perfect thermal conditions necessary to breed healthy sturgeons. These perfect conditions translate into exceptional quality caviar. The cleanliness of the location affects the unique taste of caviar.
